I contacted founder Sana Javeri Kadri earlier this week because I needed some answers.
In the summer of Arkansas, I just bought a new grill and I’ve been delivering the diaspora on every piece of meat and vegetables I can do. Byadgi Chilli, Jodhana Cumin and Peni Miris Cinnamon of the Expatriate quickly became staples in my spice drawer. When we cook together, my boyfriend asked me to bring my black pepper (yes, black pepper!) to his house because you don’t have much to buy at the grocery store.
These spices are more vibrant than anything I’ve tasted before, and how did Kadri build millions of businesses to bring them from South Asia’s farmers into the hands of people like me? That’s what I have to know, yesterday Kadri thanked me for giving me some answers.
Most of the spices grown around the world are native to South Asia. Seeds can be extracted and transported elsewhere, and since the Europeans took over the spice trade, the seeds have been fine, but different soils, temperatures and weather can greatly change the flavor. If you want a warm, earthy, slightly bitter turmeric flavor in its original form, you need to get it from India. Nutmeg grown in India is fruity, floral and almost light. Kadri told me that in Indonesia it is stronger and almost has a tobacco flavor.
Where you grow spices and how they are grown – is crucial for the taste that ends up in the spice drawer. It all starts with the farm, and of course the farmers. Kadri has built her own business around her own business – how much money the farmer needs to develop the best way, and how much she will accept from investors to ensure that this way remains the same.
