The historian and a chef go on a journey through the history of the Arab recipes and its effects on today’s food and flavors. Kotoj is a researcher in Arab food history and Fadi Katan is a renowned Palestine chef.
From the days of old Arab dynasties and empire, they travel around Europe in search of recipe manuscripts. He started this first part in the Finnish capital Helsinki, where he found a dish’s book, which is the oldest Arabic Cookbook.
It describes the ninth-century rivals, including a singer-musician named Ziraib, who favored the court in Baghdad and fled to the Cordoba in the Muslim Al-Andlas. He brought the knowledge of music, art, fashion and cooking with us in Spain and is famous for a stew called Green Tafa.
Kotoj revived the recipe and cooked in the 21st -century kitchen, the Millennium after the first preparation.
